Terroir:

The Valdo vineyards are located in the heart of the Prosecco region, particularly in the hills of Valdobbiadene, which are renowned for their ideal conditions for Glera cultivation. The area's unique terroir is characterized by mineral-rich clay and limestone soils, providing excellent drainage and adding a distinct minerality to the wine. The vineyards benefit from a cool climate, with significant diurnal temperature variation, which allows the grapes to ripen slowly and develop intense aromatic qualities while preserving their vibrant acidity.


Viticulture:
The Glera grapes used for Valdo Prosecco Extra Dry are hand-harvested from select hillside vineyards, ensuring only the best quality fruit is used. The vineyards are managed with sustainable practices, focusing on biodiversity and minimizing environmental impact. This approach results in healthy vines that produce grapes with concentrated flavors and vibrant acidity.


Winemaking:
Valdo Prosecco Extra Dry is crafted using the traditional Charmat method, where the second fermentation occurs in stainless steel tanks at controlled temperatures. This process helps to retain the fresh, fruity aromas and fine bubbles that define Prosecco. After fermentation, the wine is matured on its lees for a short period to enhance its complexity and texture before being filtered and bottled under pressure to maintain its sparkling quality.
