Terroir:  
The grapes for Uva Non Grata are sourced from vineyards located in the hills northwest of Lyon, France. The soils in this region are primarily granite and siliceous, which are well-suited for growing Gamay.
Viticulture: 
 The vineyards are cultivated with a focus on maintaining the natural characteristics of the soil and environment. Grapes are hand-picked early to preserve freshness and primary fruit characteristics.
Winemaking:  
The winemaking process employs traditional carbonic maceration, where fermentation begins naturally by the weight of the berries in the vat, crushing those below. This is followed by a short cuvaison to maintain the upfront, juicy fruit character. The wine is matured 75% in stainless steel tanks and up to 25% in second and third-fill French oak barrels for six months.
Tasting Notes: 
Uva Non Grata is a vibrant, fruit-forward wine with aromas of fresh, primary fruits. On the palate, it offers flavors of soft red berries, including black currant and blueberries, with a hint of dried thyme and cassis. The wine is elegant and complex, featuring round, medium tannins and well-balanced acidity.
