Viticulture:
The vineyards are farmed organically and biodynamically, reflecting Arianna Occhipinti's commitment to sustainable and environmentally friendly practices. The vines are trained in the traditional bush vine (alberello) system, and the grapes are hand-harvested to ensure optimal quality.
Winemaking:
"SP68" is a blend of Nero d'Avola and Frappato. The grapes undergo spontaneous fermentation with indigenous yeasts in cement tanks, followed by a short maceration period of about 15 days. The wine is then aged for six months in cement tanks to preserve its fresh and fruity character. It is bottled unfiltered and with minimal added sulfites.
