"Soffocone", the provocative name given by Bibi Graetz to this wine, which is an almost pure Sangiovese, with a small percentage of Canaiolo and Colorino, produced in the region of Fiesole, not far from Florence. The vines are old, around 40 years old.
The Toscana Rosso Soffocone di Vincigliata di Bibi Graetz was born in vineyards located in the municipality of Fiesole, on the hills overlooking the beautiful city of Florence.
Fermentation takes place in stainless steel tanks at a controlled temperature, with daily punching down. Subsequently the wine is aged in barrique for 15 months, before being bottled.
The Soffocone di Vincigliata is characterized by an intense ruby red color. The nose opens with elegant aromas of wild berries, enriched by pleasant spicy notes of cocoa. On the palate it is pleasantly soft and round, with balanced tannins.
