This Grand Cru Champagne originates from the Côte des Blancs region, with vineyards in Mesnil-sur-Oger, Oger, Cramant, and Chouilly for the Chardonnay, and Bouzy for the Pinot Noir. These regions are renowned for their chalky soils which impart a distinctive mineral quality to the wines.
Viticulture:
The estate practices sustainable viticulture, emphasizing environmental stewardship. The vineyards are managed to promote biodiversity, with natural grassing in winter and ploughing in summer. Chemical inputs are minimized, and mechanical work is performed using an electric tractor.
Winemaking:
The Rosé Blanc is a blend of 92% Chardonnay and 8% Pinot Noir. The Pinot Noir is vinified as a still red wine and blended with the Chardonnay. The champagne is made using the traditional method, undergoing primary fermentation in stainless steel tanks followed by malolactic fermentation. The wine is aged on the lees for a minimum of 20 months before disgorgement, resulting in a refined and complex profile. The dosage is kept at an extra brut level, typically around 1-2 g/l of sugar.
