Terroir:
The vines for La Folie are spread across over ten different parcels in the commune of Champigny, one of which is notably called "La Folie". The soil composition includes old lake beds with clay and limestone, providing a unique terroir that enhances the wine’s complexity and structure.
Viticulture:
The vineyard is farmed organically and has been certified since 1997, with biodynamic practices introduced in 2012. The vines, planted in the 1970s, are managed with a Guyot simple pruning method. The grapes are hand-harvested to ensure optimal quality.
Winemaking:
Fermentation is carried out with native yeasts in 50 hl concrete vats over four weeks. The wine is then aged for 12 months, with half the time in 38 hl foudre (large wooden vats) and the other half in 4-5 year old barriques (small barrels). The wine is unfined and unfiltered, maintaining its natural purity.
