The grapes are sourced from biodynamically farmed vineyards. This approach emphasizes sustainable and environmentally friendly practices. The Pinot Grigio vines are trained traditionally on pergolas and harvested by hand to ensure optimal quality.
Winemaking:
The wine is made from 100% Pinot Grigio grapes. The grapes are destemmed and fermented spontaneously with natural yeasts in clay amphorae (tinajas) from Spain. The wine undergoes an extended maceration on the skins for 8 months, which enhances its complexity and texture. After fermentation, the wine spends a brief period in used acacia barrels and is bottled without fining or filtering, with only a minimal addition of sulfur.
Tasting Notes:
"Fuoripista" displays pink and orange hues, with aromas of wild strawberries and minty herbs. The palate is soft and textured, featuring zesty acidity and sour citrus tones balanced by crunchy orchard fruits. The finish is long and mineral, with a floral note that lingers.
