Terroir:
The vineyards are located in the Languedoc-Roussillon region, specifically in the Pays d'Oc IGP. The soils are predominantly clay-limestone, which provide excellent drainage and contribute to the wine’s vibrant acidity and minerality. The specific plots for this wine are Villeraze and Cantoaoussel.
Viticulture:
The vineyard practices sustainable and organic viticulture. The vines are trained using the Guyot single cane system with a density of 6,500 vines per hectare. Yields are controlled to around 75 hl/ha to ensure concentration and quality in the grapes.
Winemaking:
The Colombard grapes are harvested nocturnally to preserve their freshness. The grapes undergo pneumatic pressing, with the first juices being processed under inert gas (nitrogen) at 5°C to prevent oxidation. The must is then cold-stabilized for 6 days. Fermentation takes place at 15°C in stainless steel tanks, and the wine is aged on fine lees for two months without undergoing malolactic fermentation.
