Terroir:
Champagne Jacquesson's Cuvée 745 is primarily based on the 2017 vintage, incorporating grapes from the Grand Cru and Premier Cru vineyards in Aÿ, Dizy, Hautvillers (66% of the blend), and Avize and Oiry (34% of the blend). The vineyards benefit from a mix of chalk and limestone soils, providing the wines with finesse and minerality.
Viticulture:
The estate practices sustainable viticulture, focusing on environmental sustainability and minimal intervention. The vineyards are meticulously maintained to produce high-quality fruit, with a blend consisting of 55% Chardonnay, 25% Pinot Noir, and 20% Pinot Meunier.
Winemaking:
The Cuvée 745 is vinified on the lees in oak barrels, adding texture and complexity to the wine. It undergoes no filtration or fining, preserving its natural character. The wine is aged for four years before disgorgement in February 2022, with a very low dosage of less than 1 g/l, classifying it as Extra Brut.
Tasting Notes:
This champagne presents a light yellow color with very fine bubbles. The nose is complex with aromas of white flowers, citrus fruits, and mineral notes. On the palate, it offers a fresh attack with a balanced acidity and richness, showcasing flavors of poached pear, baked apple, lemon rind, and a hint of brioche. The finish is long and mineral-driven, making it a refined and elegant choice for an aperitif or pairing with oysters, fried Saint-Jacques shells, and creamy cheeses like Chaource and Langres.
