Terroir:
The vineyards are situated in the Cévennes, specifically in the area around Souvignargues. The terroir is a mix of sandstone, clay, red soil, and clapas (stones previously used to build dry stone structures). This diverse soil composition, along with the vineyard's location 50 km from the sea at the foothills of the Cévennes, contributes to the unique characteristics of the wine.
Viticulture:
Mas Lau practices organic viticulture. The vines are managed without synthetic chemicals, and traditional methods such as the goblet training system are used. The vineyard spans 11 hectares and includes a variety of grape varieties, with a focus on Oeillade.
Winemaking:
The winemaking process is minimal intervention. "Clin d'Oeil" is made from 100% Oeillade grapes, a cousin of Cinsault. The grapes undergo a 2-week semi-carbonic maceration with whole bunches. The wine is then aged for 7 months in enamelled steel tanks, followed by further aging in bottles. No sulphur is added during the winemaking process.
Tasting Notes:
Clin d'Oeil is characterized by its vibrant red fruit aromas, including notes of strawberries and cherries, with a touch of exotic spices. On the palate, it is fresh and supple, with a lively acidity and a hint of minerality. The wine is light and easy to drink, making it a versatile option for various occasions.
