Viticulture:
The Tollot family has been cultivating these vineyards since the late 1880s. The estate practices sustainable viticulture across its 60 acres, which include vineyards in Savigny-lès-Beaune, Aloxe-Corton, and Beaune.
Winemaking:
This Aloxe-Corton is made from 100% Pinot Noir. The winemaking process includes fermentation in stainless steel vats, followed by aging for 18 months in French oak barrels, with 30% new oak. This method enhances the wine's depth and integrates the oak flavors smoothly.
Tasting Notes:
The wine showcases aromas of red cherries, red plum, violets, and earth. On the palate, it is well-structured with bright acidity and moderate tannins, offering flavors of black and red fruits, oak spice, and a hint of dried thyme. The body is full, with a smooth texture and a long, elegant finish.
