Terroir:
The vineyards are situated on clay-limestone soils, with south and southeast-facing exposures. This terroir contributes to the wine's complexity and rich structure. The vines are between 30 and 50 years old, providing a deep-rooted system that enhances the mineral expression of the wine.
Viticulture:
The grapes are hand-harvested and carefully sorted. Domaine Mérieau practices sustainable viticulture, ensuring the health and quality of the vineyards.
Winemaking:
The blend consists of 80% Cabernet Franc and 20% Côt (Malbec). After destemming and crushing, the grapes undergo a maceration process with frequent punch-downs (pigeages). The wine is then aged for 18 to 24 months in oak barrels, followed by an additional 8 months in vats before bottling. This extended aging process helps to develop the wine's complexity and depth.
